About Our Sushi Rice

In Edomae sushi, rice made with bold-flavored red vinegar is often used to complement heavily seasoned fish. However, in Hokkaido, milder white vinegar rice with a hint of sweetness is preferred to highlight the freshness of the seafood.

At Tatsuyoshi The Second, we blend red and white vinegars in a unique ratio, creating sushi rice that pairs perfectly with both fresh and prepared fish.
